Repurpose Your Chop Platter For a Creative and Practical Table Setting

Remember those extra large round china plates that tend to end up at the back of your china cabinet - the ones that look like they've hardly ever been used, because they haven't been?

When we hear Chef Alton Brown talk about multi-taskers, this is the piece of vintage dinnerware we think of: the round platter or chop plate.

These platters are usually 12 to 14 inches in diameter, and in the vintage days of meat and potatoes for supper, they were the go-to serving piece for piles of pork chops.

Today, fatty meats are not in favor, and even with lower-fat pork - "the other white meat" - pork chops may not be found on the family menu as often as they once were.

But there are plenty of ways to repurpose this china. Its generous size makes it great to serve a family or a crowd. Here are some ideas:


A really big salad
Vegetable tray of carrots, celery, broccoli, pepper strips, etc. Just use a color-coordinated bowl in the center to hold the dip
Corn on the cob
Sliced fruit, especially watermelon or cantaloupe
A pile of muffins or cupcakes
A large stack of sandwiches or burgers
Pad Thai noodles with seafood
Grilled meat, like ribs, or chicken. Even pork chops

For anything that is juicy, or that can roll like the corn, choose a chop plate in coupe shape -- smooth overall with a bit more height at the sides. For pastries and baked goods, the rim shape versions give extra color and pattern around the edge to make the food look even better.

A vintage chop plate or round platter - once stowed in the back of the kitchen cabinet - is still a practical and creative addition to your next meal for a crowd, whether on the buffet or picnic table, or in the dining room.

Rinse and drain the soaked soy beans. (They will expand to more than 1 cup) 3.Make stock: In a thick bottomed pot, add 4 cups water, 3 dried shiitake mushrooms, 8 large dried anchovies (after removing the guts), and 4×5 inch pieces of dried kelp. Bring to a boil for 20 minutes over medium high heat. 4.Take the mushrooms out of the stock and chop them into small pieces. Set aside 5.Blend 1 cup of soaked soybeans with 1 cup of water until it turns creamy. 6.Chop about 4 oz pork and set aside 7.Chop 1 cup of kimchi 8.Place a heavy bottomed pot (7-8 cups) on the stove and heat it up. *tip: It's usually cooked in either a stone bowl or an earthenware bowl 9.When the stone pot has heated up, drizzle ½ -- 1 tbs sesame oil and add 2 cloves of minced garlic. Stir for 10 seconds. 10.Add chopped pork, mushrooms, kimchi, and keep stirring for a few more minutes. 11.Add 2 cups of stock and close the lid. 12.Bring to a boil over medium heat for about 2 minutes. *tip: the stew will boil over easily, so watch out! Learn the Different Ways of Cooking Bratwursts

Bratwursts are basically German-style sausages that use either pork, veal, or beef as a major ingredient. To give these special sausages a uniquely palatable taste, people usually add nutmeg, ginger, and pepper to spice up their flavors. More often than not, these sausages are also served with sauerkraut, which is basically a special cabbage dish, sandwiched together in a regular bread roll. Aside from this, there are still many other ways of cooking bratwursts. Three of the most common ways of doing this is either by adding beer, by grilling it, or by cooking it in water.

Cooking Bratwursts in Beer

From the many different ways of cooking bratwursts, one of the simplest and most interesting ways of doing so is by using beer. More importantly, a tablespoon of butter, ¼-sliced sweet onion, and four bratwursts are needed to cook this tasty dish. In a regular-sized pot, pour in at least two bottles of beers, before adding butter and allowing it to melt into a syrupy form. Wait until the liquid turns very hot before adding the sliced onions and German sausages inside the pot. Allow the syrup to dry until it sticks completely to the sausages. Using regular hotdog buns, place the bratwursts inside the buns and then top them each with sauerkraut for a truly tasty and satisfying meal.

How to Grill Bratwursts

Aside from cooking the bratwursts in beer, people can also make something special out of this dish by grilling them. After the beer has turned into a syrupy substance, remove the sausages from the pot and then place them on top of a charcoal grill. Allow them to stay for at least four to five minutes for each side until they are completely cooked. Make special sandwiches once again, this time using baguettes or hotdog buns, before adding cooked onions and mustard for richer taste and flavor.

In the meantime, a skillet can also be used in this simple process if ever there is no grill available at home. Place the bratwursts in a skillet together with the syrupy beer mix, then wait for a few minutes until the liquid part of the dish completely evaporates and turn into a flavor-rich coating for the sausages. Once again, use hotdog buns or other forms of bread wherein the sausages can fit perfectly well. Add mustard, onions, as well as other extra flavorings for a tastier and more delightful outcome.

Cooking Bratwursts in Water

For individuals who do not want their bratwursts in beer, they can use water instead to cook their sausages. Using a frying pan, fill at least half of it with water before putting in the sausages. To make the cooking process as smooth as possible, be sure not to soak the entire sausages under the water. Furthermore, use a fork to make some holes on the bratwursts, which will allow them to cook properly from the inside out. Put the stove switch into medium heat, and then cover the pan until the liquid inside completely dries out. After a few more minutes, remove the cover and wait for the sausages to cook completely before adding in the onions, mustard, as well as other flavorings.

Cooking in the Cold or Winter Weather Barbeque!

Winter weather in most of the south will usually not interfere with a good backyard barbeque. Most of us don't have to be concerned with sweeping snow off the grill in order to burn a steak. Our biggest challenge in the first cookout of the year is dusting the spiders and crickets out of the charcoal tray.





If you'll be using charcoal and a liquid lighter, know what kind of accelerant you're going to be pouring on those briquettes. It's not the volume of the whoooomp you hear when you light the fire that determines whether you coals will burn evenly or not.





Be wise and never use gasoline, lacquer thinner, lantern fuel and any of the highly combustible solutions you can buy at the paint store. Any of those can light up the night like a roman candle, and you with it. Pay the extra dollar and stick with charcoal lighter even though its fragrance may linger on the meat you're cooking.





Kerosene is another flammable liquid to avoid; not because of its ability to start a fire but because it will really stink up your food. It's a slow burner and no matter how long you let your briquettes flame, those barbequed ribs and T-Bones will taste like kerosene. It's best to stay with fuels that won't stink up the food.





The best method I've found for lighting charcoal is the chimney starter. They're basically metal cylinders with holes near the bottom for ventilation. There's a grate in the bottom of the chimney that holds charcoal. All you have to do is stuff newspaper under the grate, light it and watch the flames attack the briquettes. In just a minute the charcoal will be burning with no aroma of petrochemicals in the air.





I use my electric smoker if I'm cooking something larger than a steak or pork chops. Through experience I've learned to make sure the lava rocks in the heating pan are dry! Most folks will have stored their smoker in the garage or on the porch during winter, but if they have been left outside, they'll usually have water in the bottom of the tray.





Water and electricity don't mix. When you plug the cord into the socket, step back! The electric heating iron in the smoker will explode, leaving you with a piece of raw meat. If that happens, you'll have to go back to your charcoal grill and hope that the Boston Butts or turkey will fit inside. Check the smoker the day before and if there's water in the bottom of the heating tray, give it time to dry out before you start cooking.





Since its winter, there's the likelihood that you won't want to spend a lot of time outdoors cooking meat so it would make sense to grill steaks or pork chops because they cook faster than something large. Place a little more charcoal on the grill than you would use in the spring or summer.





The outside temperature does make a difference in the length of time it takes to cook your meat. Watch your rib eyes or center cut pork chops carefully so that they're cooked to your specifications when you take them off the grill. Cook the meat a little longer.





All the worry about constant temps in the winter is erased when you have a gas grill. Just preheat the grill to the required temperature and cook away. This is an easy way to grill just about anything, from grilled steaks to barbequed chicken. You won't get the smoky taste that comes from a charcoal grill, but it's more convenient.





The only drawback I see with winter time barbequing is daylight. It gets darker earlier so make sure you have plenty of light to work with. Either that or have a strong flashlight.

Why Chicken Is the Perfect Meat

Frying chicken is obviously the unhealthiest form of cooking chicken, as fatty oil will add calories to the already fatty skin of the chicken. Grilling chicken is another great way to reduce amount of calories and make the chicken taste great.
Dieters love both the variety of uses and how affordable the meat really is. So, remember even if you are dieting you can enjoy your chicken prepared a variety of ways because it's easy to use and cheap to buy.

Cleaning Your Barbecue Grill

You've spent a lot of money for that shiny new barbecue grill. I'll bet you're looking forward to using it this summer. Your grill is a large part of outdoor entertaining. You can ensure that it lasts for many years with proper maintainance and care.

Cleaning your grill is a big part of maintaining it. The longer it goes without cleaning, the harder it will be to clean when you finally get around to it, and not cleaning your grill can lead to rust, which will decrease the lifespan of your grill. Food sticks to a dirty grill, ruining your food. The food will pick up burnt chunks of whatever you grilled previously. So, a properly cleaned grill will help your food to turn out better, and will make your grill last longer.

There are a few items you will need to clean your grill:

Wire grill brush
Steel wool pads
Mild dish soap
Sponge
Cooking oil spray
Baking Soda
Aluminum foil

You'll need to make it a habit to brush the grill surfaces off with a good quality grill brush. This will remove any food that has stuck, and prevent buildup. If left for too long, this buildup will become more difficult to clean, and may cause the grill to rust. The best time to brush the grill is while it is still hot, after you're done cooking. Just run the brush over the grill racks before you turn the heat off. It wouldn't hurt to run the brush over the grill racks the next time you turn the grill on.

If the racks have not been cleaned for a while, and have food built up on them, you may need to wash them in the sink. Use the wire brush to remove as much of the buildup as possible, then take them to the sink, and wash them with a mild dish soap. It may be necessary to use the steel wool pads to scrub the gunk off of the racks. Rinse all of the soap and residue off of the racks before returning them to the grill.

Use baking soda and aluminum foil to remove grime and buildup from the grill. After the grill cools, sprinkle on some baking soda, and then scrub gently with a piece of aluminum foil

Once the grill has been cleaned and completely cooled, spray the racks lightly with cooking oil. A light coating of oil will prevent the racks from rusting. Just make sure the grill has cooled down completely. If you spray cooking oil on a hot grill, it could ignite and cause severe burns. If you don't have cooking oil spray, then simply wipe down the racks with a little bit of cooking oil and a paper towel. You will also want to put some oil on the grill before you start cooking. Let the grill heat up. Then, using barbecue tongs, grab a wad of paper towels, or a rolled up kitchen towel. Dip the paper towels or kitchen towel in some cooking oil, and rub it lightly on the grill. This will prevent the food from sticking to the grill, and make it easier to clean up afterwards.

By cleaning your grill properly before and after each use, you'll ensure that your food will turn out well, and your grill will last you for many years.

Soul Food Cooking: New School Rules Taking Over

Soul food cooking is slowly changing in many ways. No, the taste and satisfaction of this southern cuisine continues maintain it's tradition. But the ingredients and cooking methods are starting to change. To the delight of health experts and medical professionals the changes are welcome and long overdue.
Southern cooking has long had a tradition of belly satisfying food. However, it has also had another tradition, high calorie, sodium and fat content. This contributes to heart disease, obesity, high blood pressure and other ailments. But new school rules and changes continue to take place to help make many soul food recipes more user or eater-friendly, especially when it comes to health.
Some of the changes taking place is different cooking methods that call for less fat or heavy oils in the cooking process. Other changes call for less deep fat frying and more baking, roasting and grilling instead. Stir frying has also been introduced into many soul food recipes. For example, stir fried collard greens is turning into a cult favorite among healthy soul food enthusiast. Stir frying helps to preserve essential nutrients and vitamins as opposed to boiling in high amounts of water as in the traditional way.
In addition, seasoning with traditional pork products such as ham hocks, fat back and bacon continues to slowly fade away. These ingredients also contain huge amounts of sodium and artery clogging fats. Healthier alternatives to season vegetables such as collard greens, black-eyed peas and other traditional southern vegetables is now smoked turkey. ✙✙✙✙ SCROLL DOWN TO READ DESCRIPTION ✙✙✙✙ Went out with the kids to eat some of the Philippine's famous street food. You will extensively see two kinds of street food in this episode. The grilled kind and the fried kind. The grilled food we call them INIHAW, meaning it was cooked using a grill. IHAW is to grill. I don't eat pork anymore but my former top fave it the BBQ. After that the Chicken Intestine or ISAW as we call it. It's a bit gummy but very chewable. Unlike, in my opinion, the pig intestine (Isaw Babuy) which is extremely gummy. On it's own it's not as yummy unless you're after the smoky taste, otherwise feel free to eat it as it is. But the fun part comes when you dip it in different sauces! For hygienic purposes, it is ideal not to dip it again in the vat AFTER you have taken a bite already. But there are a lot of "pasaway" or hard headed people who go into a dipping frenzy when eating. I used to eat coagulated blood or BETAMAX (because usually they're rectangular in shape like, yes, a Betamax tape) but it's pork too. The other ones like ADIDAS (Chicken feet, go figure why it's called Adidas!) , chicken head and the rest I have never tried and I am CHICKEN enough to never try it at all. Haha! Fishballs, squidballs, chicken balls and sometimes shrimp balls are very common. It fills the stomach just right and it is more sanitary than the grilled counterpart since it is deep fried. Meat Xtras Cookoff: Smoky Pork Burgers with Fennel and Red Cabbage Slaw

Third round of the Meat Xtras burger cook off challenge, Ben goes through the process of creating a Smoky Pork Burger with Fennel and Red Cabbage Slaw from scratch. He uses both the standard fine plate and the 12.5mm plate in the grinder attachment for the Kitchen Aid. The 12.5mm grinder plate gives him a very coarse texture. Here is his recipe: Smoky Pork Burgers Ingredients 1 pound ground pork sirloin 1 cup finely chopped bacon, from about 2-3 rashers 1/2 cup finely diced onion 2-3 garlic cloves, minced 2 tablespoons fennel seed 1/2 teaspoon kosher or sea salt 2 teaspoons smoked Spanish paprika 4 soft burger rolls or sandwich buns Gently toast the fennel seeds in a small dry skillet until aromatic, remove them from the pan and set aside. In a large mixing bowl, combine the onion, garlic, fennel seeds, salt and smoked paprika, stirring to combine. Add the pork and bacon, tossing gently until the seasonings are well incorporated, but taking care not to overwork the meat. Divide the seasoned pork into four portions and shape into patties. Place the patties onto a plate or platter and chill for at least one hour. Light a grill and cook the burgers: 6 minutes over the hot side of the grill, rotating them after the first 3 minutes, then flipping them and cooking them for another 3 minutes on the hot side before moving them to the cool side of the grill for the final 3 minutes. Shish-Kebabs Chicken Souvlaki 6 tbsp lemon juice 4 tsp olive oil 1 tsp dried oregano 1/2 tsp salt 4 minced or pressed garlic cloves 4 boneless, skinless chicken breasts Combine all ingredients, except chicken, in a measuring cup and stir. Cube chicken breasts and place in a plastic bag with zipper closure. Pour juice, oil, garlic and spices over chicken, close bag and shake until mixture is evenly distributed around chicken. Marinate in refrigerator for at least 20 minutes. Remove chicken from bag and thread onto bamboo skewers. Cook in a non-stick double-sided grill or on a single sided grill, rotating skewers. Soul food recipes continue to grow more popular as it crosses more cultural, social and even economic lines. Betty's Easy and Tender Barbecued Boneless Pork Ribs Recipe

In this video, Betty demonstrates how to make incredibly tender and tasty Barbecued Boneless Pork Ribs. This is accomplished by cooking the ribs in a crock pot, then removing any excess fat, coating them with a delicious barbecue sauce, and browning them off in an oven. You have to see it to believe it! (Note: I used a bottled sauce. The purpose of this video is not in the making of the sauce, but rather in the preparation of the ribs.) Ingredients: 2 pounds boneless pork ribs 18 oz. bottled barbecue sauce (I used KC Masterpiece--about 1/3 to 1/2 of the bottle.) meat tenderizer, to taste Sprinkle meat tenderizer on the top and bottom of each of the boneless pork ribs. Place them in a crock pot, turn it to "low," and let the ribs cook for about 5 hours. Remove the ribs from the crock pot, and place them on a platter. Cover with plastic wrap, and let them cool to room temperature. When cool enough to handle, trim all excess fat from the cooked ribs. They will be very tender, so you will need to handle them gently. After each rib is trimmed of fat, place it in a bowl that has a generous amount of bottled barbecue sauce. Roll it to coat it with barbecue sauce. Then place it on a broiler pan that has a drip pan underneath to catch any drippings. (I cover my broiler pan with aluminum foil, so there will be an easy clean-up.) The most popular pork rib is the St. Louis Style Rib which comes from the pig's rib section. ·1/4 cup dark brown sugar
·2 tablespoons black pepper
·1 tablespoon salt
·1 tablespoon celery salt
·2 teaspoons garlic powder
·2 teaspoons dry mustard
·2 teaspoons cumin
·1 teaspoon cayenne pepper
Preparing the ribs - Wash the ribs and blot dry with paper towel. Place the ribs meat-side up. Cut the line of fat on the base of the ribs to remove the cartilaginous rib tips. Flip the meat over and cut off the flap of meat on the inside of the ribs. This is not essentially but will help prevent them from burning. Remove the membrane on the back of each rack of ribs. You can use your fingers to pull it off but sometimes it's easier to use a paper towel or a dishtowel to get a secure grip.
Combine the ingredients for the rub and mix well. Liberally rub the ribs on both sides with the mixture. Wrap each rib in plastic wrap then aluminum foil and let marinate for at least 4 hours, but over night is best.
Preparing the smoker - Presoak your wood chips in water for roughly an hour. Place a drip pan in the center of your smoker with plenty of water. A charcoal chimney is best to get your coals started. Once you have hot coals spread them out and put a health amount of your chips down.
Smoking the ribs - Place aluminum foil on the rack before placing the ribs down and another loose piece on top of the ribs. Place the ribs on the smoker over the drip pan and cover the smoker. I can make good scrambled eggs, and good sunny side up eggs, but for some reason I'd always break the yolk when trying to turn the egg over easy. This is the first time ever I made perfect over easy eggs. I'm mostly into cooking dinner stuff, like home made spaghetti and meatballs,grilled steak,pot roast,pork chops, etc, you get the picture.
